Key Responsibilities:A. Retort Sterilizer Operation
1. Operate retort/sterilizer machines for thermal processing of food products (pouch).
2. Load and unload product batches into the retort baskets following standard operating procedures (SOPs).
3. Monitor time–temperature–pressure cycles during sterilization to ensure compliance with process schedules.
4. Verify and calibrate temperature and pressure gauges, sensors, and data recorders.
5. Maintain accurate batch records, charts, and sterilization logs as per HACCP and FSSAI requirements.
6. Conduct pre- and post-sterilization inspections of packaging integrity and product appearance.
7. Report any deviation, malfunction, or alarm condition immediately to the supervisor.
8. Ensure sanitation and cleaning of the retort area, valves, and pipelines after each batch.
B. Boiler Operation:
1. Operate, monitor, and maintain the steam boiler used for heating and sterilization processes.
2. Check fuel (diesel) supply, water levels, and pressure gauges regularly.
3. Ensure correct boiler pressure and steam temperature as per process needs.
4. Perform daily checks for leaks, unusual noises, and equipment efficiency.
5. Carry out routine blowdown and maintain boiler water treatment parameters.
6. Record operational data (pressure, temperature, fuel consumption, maintenance logs).
7. Assist in preventive maintenance and coordinate with maintenance teams for repairs.
C. Safety & Compliance:
1. Adhere strictly to safety procedures.
2. Follow FSSAI, GMP, HACCP, and ISO 22000 food safety standards during operations.
3. Ensure safe handling of steam and pressure systems to prevent accidents.
4. Participate in training programs for emergency handling and safety drills.
D. Maintenance & Housekeeping:
1. Perform minor mechanical maintenance and cleaning of retort, boiler, and auxiliary systems.
2. Maintain good housekeeping in the processing and boiler area.
3. Support plant shutdown, cleaning, and start-up procedures.
Qualifications and Skills:
Education: ITI/Diploma in Mechanical, Electrical, or Food Technology.
Experience:
1. 2 years of experience in operating sterilizers and/or boilers in a food processing or beverage plant.
2. Hands-on experience with steam boilers, pressure vessels, and automated retort systems preferred.
Skills:
1. Knowledge of temperature-pressure control systems.
2. Ability to read process charts and handle process deviations.
3. Mechanical aptitude and troubleshooting ability.
4. Attention to detail and record-keeping accuracy.
5. Commitment to safety and hygiene practices.
